
I think i found the best muffin recipe to make at home. These muffins are fluffy and so yummy for breakfast, a snack, or dessert. Below i have all of the measurements and instructions to make the best batch yourself 🙂 The recipe makes about 12 muffins. My favorites have been blueberry muffins with oats sprinkled on top and chocolate chip muffins with almond slices mixed in.
Preheat oven to 425 degrees and bake for about 15-20 minutes
Soak 1 cup of old fashioned oats + 1 cup almond milk for 15 minutes – let sit while you combine all the other ingredients and then add to the mixture after the 15 minutes is up and the oats are soft
1 1/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon (or more if you love cinnamon like me)
1/2 tsp salt
1/4 vegetable oil
1/2 cup honey
1 large egg
1 tsp vanilla
Add in any other favorites: blueberries, chocolate chips, coconut, cranberries, nuts
