Favorite Things to Cook at Home

One of the hardest things about being away at school is not being able to be home to cook my own meals. Being home for my winter break has given me so much time to cook some favorites . . .


Scrambled eggs w/ two egg whites, one whole egg, a big handful of spinach, salt and pepper. I’ll typically add a cup of berries, grapefruit, or chop up an apple on the side.

Baked oatmeal (recipe under lifestyle tab and on my instagram) I’ll add almond milk, extra cinnamon, and berries on top.

Egg sandwich w/ one egg, a big handful of spinach, your choice of cheese, salt and pepper, (i add hot sauce), all on an English muffin or a piece of toast. Again i’ll have some fruit on the side.


Mixed green salad w/ cranberries, chicken if we have it, crumbled blue cheese, two cap fulls or apple cider vinegar, lemon juice, pepper.

A Veggie burger on a big handful of mixed greens, tomatoes, cucumbers, two cap fulls of apple cider vinegar, lemon juice, pepper.

Other Recipes I’ve made lately . . .

Baked Chickpeas:

Rinse a can or two of chickpeas

Let dry on a paper towel for 10 minutes

Spray pan with PAM or a drizzle of oil

Roll chickpeas around the pan to coat them in the oil

Add seasonings – I use salt, pepper, and parsley flakes

Oven to 450 degrees for about 45 minutes (check on them halfway through to roll them around the pan a bit)

Coconut Oatmeal Cookies:

1 cup quick oats

Half cup flour

Half cup plain applesauce

Half cup shredded coconut

Half cup honey

Pinch of baking powder

Pinch of salt

Pinch or cinnamon

Cap full of vanilla

Oven to 350 degrees and bake for about 15-20 minutes or until they start to brown on the edges. I made these following no recipe so if the mixture is the wrong consistency just add more applesauce or add more flour.
